We have a long history with Hacienda Esmeralda so we are thrilled offer this rare lot here at Chuck’s Roast. We began sourcing lots at their farm way back in 2007 and our relationship with the Peterson family grew from that year as I started to include Panama on Central American sourcing trips each year with the sole purpose of buying more coffee from Esmeralda. With each visit to their beautiful farm, I grew more attached to the farm and the Peterson family’s mission of sustainability, social responsibility, and their never-ending commitment to quality and willingness to experiment and improve. They were and are everything a coffee roasting company would want in a farming partner.

The Petersons have always embraced the very latest in cherry processing technology. This lot is technically a natural/dry processed coffee but because the coffee was allowed to ferment for 120 hours in an anaerobic environment and then dried in a cold room for 38 days without without being exposed to harsh sunlight the structural integrity of the bean was preserved, leading to a much cleaner, more dynamic cup than is typical for a natural coffee. Sometimes too, traditional natural processing will hide the Geisha varietal’s unique flavor characteristics, not so in this case. This coffee tastes like a Geisha.

In the cup, strawberry jam, blackcurrant, lemon zest, sweet cherries and jasmine with a super rich luxurious body — it is coffee-tasting journey unlike what you may have experienced before.

This batch will be roasted on 1/15. If you ordered other coffee that will be roasted before this date, we will ship it after this batch is roasted on 1/15.
