NEW! Colombia Finca Agua Blanco
During sourcing trips to Colombia, I spent a lot of time in Cauca, a region that boasts some truly fantastic coffee and this lot is no exception.
Finca Agua Blanco, owned by the Penna family since 2008, is located in Colombia’s volcanic Inza region where fertile land contributes to the unique and wonderful coffees that can be found there. Specifically, this coffee is grown within the Tierradentro achaeological park, known for having the largest concentration of monumental underground tombs from the pre-Hispanic era.
The coffee is a mix of Caturra, Typica and Colombia varietals and is grown at very high elevation, about 1800-1900 meters. The coffee is processed like most of the coffee in the area: ripe cherries are de-pulped manually, fermented for 12-24 hours, washed and dried on raised parabolic beds. Much of the coffee produced in region is exceptional due to the co-existance of ancestral knowledge and modernization trends.
In the cup, this is a syrupy coffee filled with juicy plum, raisin, mild spice, and cocoa with a rich velvet-like finish.
Orders are roasted Tuesday and Wednesday.
